Thomas Burke, MPH is Manager, FSQA Traceability at Chipotle Mexican Grill (CMG), where he oversees administration, automation, and process enhancements for CMG’s traceability system, encompassing the food supply chains for over 3,000 restaurant locations. Additionally, Burke works on other digital initiatives, including cold chain monitoring, RFID, and supply chain enterprise architecture, and represents CMG in standardization initiatives. He previously served as the Senior Food Traceability and Safety Scientist at IFT’s Global Food Traceability Center and technical lead for the Global Dialogue on Seafood Traceability. Burke also researches and writes about emerging technologies, protocols, and related processes pertaining to digital food systems, writing for outlets such as Forbes.com and Food Technology Magazine. He holds a Bachelor of Science in microbiology from Kansas State University and a Master of Public Health in epidemiology at Emory University.
